Homemade Chocolate Banana Ice Cream
Serves 2
Ingredients
3 ripe bananas
¼ tsp vanilla extract
1 pinch salt
3 tbsp cocoa powder
Method
1. Peel the ripened bananas, cut them into pieces and then freeze them. (The more ripe the bananas are the more caramelized and sweet-tasting the ice cream will be).
2. Once the bananas have frozen, place them into a blender/food processor along with vanilla extract, cocoa powder and a pinch of salt.
3. Blend the mixture until it reaches a soft-serve consistency. (If needed add ¼ cup of milk to reach your desired consistency).
4. Once you have reached the desired texture, scoop the mixture into a container and freeze for 30 minutes before serving.
Fruit Kebabs
Serves 1
Ingredients
4 strawberries
1 naartjie, peeled
½ mango, cut into pieces
1 kiwifruit, peeled and quartered
⅓ cup blueberries
Handful red seedless grapes
Method
1. Thread strawberries, naartjie, mango, kiwi, blueberries and grapes onto skewers.
2. Enjoy!
Tuna Rice Cakes
Serves 1
Ingredients
1 tin tuna in brine
1/2 tsp salt
1 handful fresh rocket
4 rice cake
1/2 tsp black pepper
1 tsp lemon juice
2 tbsp yogurt
2 tbsp basil pesto
Handful chopped baby tomatoes
Method
1. Mix tuna with the yogurt, salt, pepper, lemon juice and chopped tomatoes.
2. Spread pesto onto rice cakes, top with rocket and place the tuna mixture on top.
