Smoked Chicken Pasta
Serves 1
Ingredients
1/3 white onion
1/2 garlic clove, crushed
1/4 tsp table salt
1/4 cup green peas (any green vegetable you have on hand can also be added to this meal; Other examples are broccoli, asparagus, baby marrow, green pepper and spinach)
50 g wholewheat pasta (you may already have some pasta in your pantry, if not, ¼ cup rice would work well in this recipe too)
120 g smoked chicken (this is an easy alternative to having to cook the meat, fish or chicken in your dinner; It can also be replaced with leftover meat, chicken or fish you may have in your fridge from a previous meal)
1 tsp olive oil
1 tbsp plain, low-fat yoghurt
1 tbsp lemon juice
1/2 tsp black pepper
Method
1. Heat the olive oil in a pan over medium heat. Sauté the onion until soft. Add the garlic, lemon juice and yoghurt. Stir through the peas and any vegetable you may want to add to your meal.
2. Boil the pasta in 2 cups of water in a pot until cooked (about 15 minutes), and drain excess water. Add the pasta to the pan and toss.
3. Slice the chicken and serve on top of the pasta. Season to taste.
